Roasted Fruit with Vanilla Ice Cream
- 2 peaches
- 2 plums
- 2 nectarines
- 2 sprigs of fresh rosemary
- 2 to 3 tblsp sugar
- 2 tblsp butter or margarine cut into pieces
- 1 tblsp fresh lime juice
- Preheat oven to 400*F
- With a fork, prick the skins of the peaches, plums and nectarines.
- Halve the fruit and remove the pits, then halve the fruit again.
- In a roasting pan, toss fruit with 2 sprigs of fresh rosemary, 2-3 tblsp sugar (depending on the sweetness of the fruit), 2 tblsp butter or margarine, and 1 tblsp fresh lime juice.
- Cook, tossing occasionally, until fruit is fork-tender, about 15 to 20 minutes.
- Serve warm over vanilla ice cream (or frozen yogurt if you're on a diet) and drizzle pan juices over the top.
Serves 4
